Addy’s Potato Salad

We are so happy that you have joined us for our next program for our inaugural exhibit, American Girl: 35 Years of Strong Characters

For today’s program, we will be making Potato Salad, a recipe brought to us by one of American Girl’s caring and kind characters, Addy. Her story takes place during the Civil War.

Today’s recipe can be found in Addy’s Cook Book: A Peek at Dining in the Past with Meals You Can Cook Today. The following ingredients and directions make six servings. We hope you enjoy Addy’s Potato Salad.

Ingredients

  • 6 medium potatoes

  • 2 hard-boiled eggs

  • 1/2 teaspoon salt

  • 1/4 teaspoon dry mustard

  • 1 cup mayonnaise

  • Paprika to sprinkle on top

Equipment

  • 3-quart saucepan with lid

  • Slotted spoon

  • Plate

  • Knife and cutting board (Ask a parent or guardian for help)

  • Large mixing bowl

  • Measuring cups and spoons

  • Wooden spoon

  • Serving bowl with lid

Directions

  1. Wash the potatoes, and then put them in the saucepan. Add water to cover them.

  2. Turn the heat to high until the water boils, or bubbles rapidly. Turn the heat to medium low. Cook the potatoes, covered, for 20 minutes. Have an adult help you use the slotted spoon to move the potatoes to the plate.

  3. When the potatoes are cool, slide them into small cubes. Put them in the mixing bowl.

  4. Crack the eggshells and peel them off. Chop the eggs into tiny pieces. Add them to the mixing bowl. Then mix in the salt, pepper, mustard, and mayonnaise.

  5. Spoon the potato salad into the serving bowl. Sprinkle paprika on top. Cover the Sala and chill it 2 hours before serving.
